Vegetarian Red Peppers

Looking for a quick an easy meal?
Mama's Stuffed Vegetarian Red Peppers.

Prep Time:


 time 8-10 mins
Cook time: 20-25 mins
Serve 4-6
(depending on the size of your peppers)
4 Red, Green or Yellow peppers
1 1/2 Cups of cooked brown rice
1 tbsp of vegetable oil
1 medium onion (diced)
2 cloves of garlic (minced) fresh
1 cup of corn (frozen or can)
1 cup of tomato paste
1 can of Black Bean (drained & rinsed)
1 tsp cumin
2 tbsp of parsley (fresh chopped)
1tsp garlic salt
2 cups of Griller Crumbles
(optional you can find them in your grocery store)
1 tbsp Roasted Garlic Hummus
1 tbsp of Seasoning(your choice)
Preheat your oven to 350F
Wash and remove the top of the pepper
Remove the inside of the peppers (seeds and ribs)
Grab your favorite pot. Add your oil, onions, parsley and garlic. Let simmer for about 6-8 minutes. Now add your brown rice, cumin, beans, corn, and tomato paste. Let cook for about 2 minutes. Add your Griller Crumbles and stir. Now add your Roasted Garlic Hummus and seasoning. Once all your ingredient are together. Turn off your pot and add the mixture to peppers. Make sure you spray your pan. Bake at 350F for about 20-25 minutes until your peppers are tender. Do not overcooked.
